Peanut Butter Goo Goo Banana Bread

Basic banana bread, but make it chocolate! Our Peanut Butter Goo Goo Banana Bread recipe is an immediate favorite. Using Peanut Butter Goo Goos, the creamy clusters add another layer of warmth to this comfort food.

Peanut Butter Goo Goo Cluster Banana Bread

 

Made with Peanut Butter Goo Goo Clusters
Yield: 8 servings (one 9x5 loaf pan or one 9-in cast iron skillet)

Ingredients:

1 ⅓ C all-purpose flour
⅓ C black or dark cocoa powder
1 tsp Kosher salt
3/4 tsp baking powder
1/4 tsp baking soda
⅓ C unsalted butter, soft
3/4 C firmly packed dark brown sugar
2 large eggs
1 1/2 C mashed banana (3 large bananas)
1/4 C crème fraîche*
2 tsp vanilla extract
3 Peanut Butter Goo Goo Clusters, chopped

Optional Garnish:

1 banana sliced in half lengthwise
3 tbsp (36 grams) Demerara sugar**

Substitution options:
*Crème fraîche with sour cream or plain greek yogurt
**Demerara with turbinado/raw sugar

Directions:

In a large bowl, sift together flour, black cocoa, salt, baking powder, and baking soda. In a separate bowl, cream butter and sugar until pale in color.

Add in eggs, mashed banana, crème fraiche, and vanilla extract and mix until combined. Fold in sifted dry ingredients in two parts just until batter comes together. Fold in chopped Peanut Butter Goo Goo Clusters.

Pour into prepared pan and top with sliced bananas. Sprinkle with Demerara sugar and place in preheated oven (350°F convection/325°F convention) to bake for about 45 minutes to 1 hour. Let cool in pan for 10-15 minutes, then remove and let cool completely on wire rack.
